In four days I am going to Norway to participate in a students festival in Trondhiem, team and members in my workshop which is about food are trying to put togather a recipe book.
here is what I wrote:
There are lots of recipes that I like, as I am Palestinian living in Italy, it was a bit hard to chose a favorite recipe from one of two great cuisines, finally I decided to send a Palestinian dish, which happens to be one of my host family's favorite meals, even Miriam, who is three years old loves it very much.Actually, it is not a main dish, it's an appetizer. In arabic called Hummus, here in Italy we call it salsa di ceci, and hummos in english mean chickpeas.No matter what name you want to give to this plate, what's important is that this plate represents an identity, is a symbol of a people. The taste takes you back to where this dish comes from, and invites you to open your imagination to see that and to comunicate with the food culture in that place.The plate is famous in the Middle East especially in Palestine, Syria, Lebanon and Jordan, one of the favorite meals for breakfast or a "light dinner", many families make it at home and others simply buy the prepared plates. Nowdays, its easy to find it everywhere in supermarkets, while I remember when I was child that I used to go to a special and small Hummos Falafel shops in my neighborhod taking with me a an empty plate from the house to fill it with hummus for the Friday breakfast, the weekend in Palestine. Usually hummus is accompanied with falafel and ful, which are also typical mediterrenean arab meals, without forgetting the Arabic pita bread, adding of course genuine extra virgin olive oil on your hummus plate.
Ingredients:
Boild Chickpeas 250 grGarlic 1 piece4 tablespoon spoons of olive oil1 tablespoon of Cumin Chopped Parsely1 tablespoon Salt6 tablesspoons of Tahineh (seasam cream)1-2 lemons.
As I grew up, and watched my mother cook she never measured ingredients, she simply used her senses, (smell, touch, see and taste), and when you ask somebody to give you the recipe of a dish in the Arab world they never tell you the quanties, they very much tell you the ingredients, but not quantities, and they will keep telling you, it's realy how you like it, add more salt, or less olive oil, etc.
Preparation:
Put all the ingredients together in the mixer, and chop together, and in 5 minutes you will have a wonderfull appetizer to offer to your guests with arabic pita bread, to eat it in the morning, or for dinner, and of course, serving with it seasonal vegtabels salad. Also, you can use Hummos as a sauce to eat with meat, chicken and Fish
